Animals obtain sugar molecules like glucose through the food they eat. Once ingested, these sugar molecules are broken down through digestion and absorption processes in the body to be used by mitochondria to produce energy through cellular respiration.
Sugar is a calorie rich food source, it provides a good deal of energy for a small volume of food.
The process of fermentation in baking or brewing requires sugar osmosis. Yeast cells use sugar as a food source, and during fermentation, they take up sugar molecules through osmosis to produce carbon dioxide and alcohol. This is essential to the rising of dough in baking and the production of alcohol in brewing.

Only certain bacteria can grow on sugar (sucrose). In order for a bacteria to be able to grow on sugar a certain level of moisture must be present along with the ability to absorb sugar as a food/energy source.
