Depending on which state you reside in the answer will be entirely different. In New York State, and Rhode Island where I attended Culinary School at Johnson and Wales, the answer to that is... yes and no. In any professional work environment where contact with an item to be purchased and consumed, it is required that employees wash their hands before returning to work. In New York, it has been determined that currency is not a method of transmitting disease or infection, and therefor, it is not required to change gloves or wash hands between contact with currency and food. In addition, coffee is served at well over 140 degrees, which the federal government has set as the minimum temperature required to kill all bacteria and denature viruses. Anything served at that temperature can technically come in contact with a bare hand, but can not transmit disease as long as it is at a homegenous temperature. For this reason it is not required that gloves be worn when serving coffee, and during the process of making it, little to no contact will be made between soiled hands and the finished product anyway. Long answer to a simple question, but I hope it answers peoples questions.
