The amount of tomato juice that equals one tomato can vary based on the size of the tomato and how much juice is extracted. On average, one medium tomato yields about 1/2 to 3/4 cup of juice. Therefore, approximately 1 medium tomato would produce around 4 to 6 ounces of tomato juice. However, this can differ depending on the tomato variety and ripeness.

Tomato juice is a high acid prodoct. It is necessary to bring it up to temperature to soften the tomatoes to make it easier to process them. Simmering them for ten to fifteen minutes should suffice.

Tomatoes can be safely eaten by sufferers of gout. Although this may be true for whole tomatoes I have personally had 2 bouts of gout brought on by drinking tomato juice. I have only just confirmed that tomato juice is a cause of gout today with a medical professional. I have never had an attack of gout from eating whole tomatoes, tomato soup or tomato sauce; so it may be something to do with the processing of the tomato juice.
The pH scale is the negative base 10 logarithm of the hydrogen ion concentration. Thus, a pH of 2 means [H+]= 10-2 while a pH of 4 means [H+]= 10-4. Thus, lemon juice is 100 (102) times more acidic than tomato juice.
If by go off you mean spoil, then yes, but due to the higher acid content, any pathogen that causes canned tomato juice to spoil is pretty hardy, and if the spoilage occurred before the container is opened, something unsanitary happened during the canning process.
