Because of the simple development of the English language. Same reason a tree is called a tree, or a man called a man. There is no specific reason.

Maybe because it resembles a yam that grows in Haiti called a katato or something like that.. Some say no.. It was named after the original name that was papas.. The Spanish soldiers thought they looked like little yams, that they called papas, so the little papas was patata in Spanish and potatoe in English. Sounds as good as any to me.
