In a three phase connected system, if the loads are not balanced or if one voltage is disconnected due to any reason there will be neutral displacement to a new voltage level (from normal zero voltage). This can increase/decrease voltage in other phases

Well, voltage wise, you have a lot going on when your are cranking over the engine, so some flutter, or shake is normal.
Amps are just a general measurement of electric current in any application, whereas the term cranking amps are specific to automotive / starting battery applications. Cranking amps is a measure of the maximum current a car/ starting battery can produce in normal temperatures for 30 seconds before the battery voltage drops too much.
The head lamps should not get dim. Dim light are an indication of low voltage. You should have a volt meter in the instrument panel. If the voltages is not reading about 14V when the engine is running, you have a bad battery or alternator. It should read over 12V with the engine not running and the ignition in the on position. It should not drop below about 9-10 when cranking the engine. If you have low voltage during cranking and normal voltage at other times, you probably need to replace the battery.

It's all relative. A battery has internal resistance. Batteries are not "ideal" voltage sources. If there is a "heavy" load on the battery (low resistance), the voltage you measure on the outside of the battery will be lower. A car battery is normally thought of as a 12 volt battery. When there is no load (disconnected) you can often measure in excess of 13 volts if it's fully charged. During normal cranking of the engine, the voltage can drop below 11 volts.
