I just installed a water pump on a 1997 Chevy Lumina and used Permatex Water Pump and Thermostat Housing RTV Silicone Gasket. Gel or paste in a .5 oz tube. Got it at ORilleys Auto Store. I don't like to install gaskets without something on them, just in case. I used a single edge razor blade to remove the old gasket material. You have to be careful not the damage the gasket face on the Engine water pump housing.
If you can't use gravity you have to use a pump of some sort.
Drain coolant. Remove all belts on the water pump pulley. Remove fan. Slide off pulley. Remove hoses. Unbolt water pump. Replace pump using new gaskets. Reinstall fan, pulleys, belts, etc. there are 4 bolts holding the pump to the block.each side has a gasket. i usually use silicone sealer with the gaskets. put the sealant on the block where the gaskets go,(if you use sealant) then put the two top bolts through the pump, and place the gaskets on the bolts to hold them in place. bring the pump up close to the block ,and try to start the top bolts.if you succeed, then put the bottom bolts in carefully ,to make sure they go through the gasket holes. when all 4 bolts are started, tighten them evenly. before starting to replace the pump be sure to clean the surface of the block very well. after that is done you have to put all the accesories, hoses and belts back on. remember to refill the cooling system before starting the engine to check for leaks.
So you can use gravity rather then a pump to get water out of them.

I changed a Water Pump first by draining the Coolant and there are some bolts that need to be loosened to take the Water Pump off. Make sure you a Gasket on the New Water Pump and use sealant to prevent Coolant leakage.
I use somthing called indian cement which is a way to keep the seal in place and makes less mess.
I my self would not, That's what gaskets are for. unless there is some inperfections were the gaskets go,if there is use a small amount of sealant only. and be sure its OEM sealer. And install gaskets.

I use water pump pliers for that. You could use a pipe wrench, but they tend to mark it.

If you're referring to the water pump gasket, and, if you're changing a faulty water pump, a gasket should come with it and also needs to be changed (Use the grey Permatex gasket sealant on the new gasket). If you're referring to the head gasket - not necessarily.
If it is a B6 motor it will have a plastic cover over the timing belt. E3 or E5 are too easy/simple/straight forward to discuss here. Remove belt,water pump pulley,plastic shroud, bolts on pump, remove pump. Use a sealant on new pump gasket and refit ,tightening the bolts evenly. Chris
