They will not appear on the activity feed unless they have answers from a nonexpert. I believe that the fact that expert answers are not listed on the activity feed is an oversight. Do not worry, they have not been deleted.

If you know the person's username - yes. Simply go to their profile page - and click on the 'activity feed' link next to the user's picture. That will show the contributions of the user.

You can find the number of questions you have answered on your profile page (there is a link to 'My profile' on the left side of the screen). Once on your profile you can look over on the right side to see how many answers, edits, etc. you have on WikiAnswers.

You can go to your profile, and click on the blue 'total' on the right where the total amount of contributions you have (if you're using the classic profile). Then go to the filter drop-down, and click Questions (asked) - and people will be able to follow-up with their questions, and see what questions they've asked as well. To find questions on the newer profiles, go to your profile and click on 'Total Contributions' and then do the same thing with the filtering.
I do answer peoples questions! If you look at my profile you will see that I have contributed at least 25,222 answers so far.
