Start with two flour tortillas. Place one on a hot, oiled skillet, sprinkle about 1/2 cup cheese (cheddar, monterey jack or a mixture of both are best), a little chopped onion, some cilantro, maybe a little chop't tomatoes, some sliced grilled chicken or beef fajita meat on the tortilla. Place the other tortilla on top, flip the quesadilla over to fry on the other side so the ingredients get hot and the cheese melts. You can use any combination of filling ingredients you want. Cheese alone is great, also. Dip the quesadilla in sour cream flavored with taco seasoning, or just plain salsa. This is something you can get very creative with :)
