You could use parmesan (although it doesnt melt as well) but I would not recommend using mozzarella as it is very different.

I am responding even though this was posted long ago. I get a reaction from eating provolone but no other cheeses. If the provolone is cold such as on a sandwich I get stomach pains, severe cramping and diareah about 5 hours later. I also spike a high fever. It lasts about an hour and then I feel like I was hit by a truck. If the cheese is melted it hits me more quickly, in little over an hour. I have never been able to determine why only provolone since its various contents and processes are used in other cheeses as well.
