Actually you can. Colonial hunters often made "hippo bacon" while they were out hunting other game. Hippo meat was a prized delicacy throughout much of southern Africa. Read up on safaris in the 1920s (or earlier) and you'll probably find reference to hippo bacon.

Actually, Canadian bacon is ham - I lived in Canada for several years as a small child, and that's what all Canadians call it - and it is. Bacon is cured and smoked meat from the rib cage of the hog. Ham is what we'd call the pig's "hip" or "thigh"
