Chocolate was unknown in the Eastern hemisphere prior to the conquest under Cortez of the Aztec empire in (present-day) Mexico, where its use (as a liquid refreshment) was first observed. Moreover, cacao, the plant from whose beans chocolate is derived, was indigenous only to the Central and South American regions of the Western Hemisphere.

It was for Europeans, however, to import and first refine it into the forms in which it is most often found and consumed since that time. From Europe it then eventually made its way to Egypt and other places.
