1) First of all, cut the pork into the preferred portions, whether you're using chops, ribs, etc.
2) Make a marinade by mixing hoisin, honey, soy and 5 spice together in a bowl.
3) Toss the meat into the marinade, make sure it is completely drenched in it.
4) Cover the meat and refrigerate for about 2 hours (or a maximum of 2 days). The longer it is left to marinate, the stronger the flavour.
5) Remove it from the fridge an hour before cooking.
6) Preheat a BBQ on a medium high heat or your oven to about 150C (300F). Place pork on a rack with a tray underneath to catch the juices. BBQ with the lid down or roast for 30-45 minutes, turning once or twice or until the pork is cooked through.
7) Boil any left-over marinade in a saucepan to create a sauce. Allow the pork to rest in foil for 5-10 minutes. Then uncover and serve with the sauce
You can also add Maltose into the marinade at step 2. It is what the Chinese use to give meat the sticky sweet texture.
