This recipe will give you about 2 quarts of mayonnaise.
Ingredients:
8 eggs
2 tbsp vinegar
2 tsp salt
2 tsp dry mustard
a pinch of cayenne
3 and one quarter pints of vegetable oil
Directions:
Beat the eggs till they are smooth then add the vinegar then add the dry ingredients. A mixer is best for the next step. Add the oil almost drop by drop till the emulsion forms. After that happens you can add the oil slightly faster. Do not add it too fast or the emulsion will break and you will have to start again with new ingredients.

Fat has a lower density than water does.A solid with a higher fat content will have a lower density, and will be more likely to float in water.Full fat mayonnaise floats because it has less density than water (1g/cm*3*) and low fat mayonnaise sinks because it is more dense than water and I think it's because of the differ in the ingredients.
It should be. Mayo is made with eggs and oil.

Mayonnaise is mostly oil and if it is olive oil or canola oil, then it has some health benefits, such as raising the level of "good cholesterol" a person has. But if it is "regular" mayonnaise, made from a type of oil high in saturated fat, then no, it is not a healthy food.
