well it depends on how long it is left, a few hours then it would just congeal and you can add water to revive it,but yes eventually gravy does go moldy
It might not be noticeably spoiled, but it would not be safe to eat.
It all depends on the circumstances. If the sausage gravy was left out all night without being refrigerated (anything like that), it will already be spoiled. The sausage gravy will need to be sealed and kept at a cool temperature. Anything like this will change the life, and my guess is that it will only be good for a few days (at most).
yes
they can get really hard if left out of a bag
Assuming that the beef sauce with cream (gravy) has been properly stored so that it has not been contaminated or spoiled, yes, it would be safe to cook chicken in the same sauce.

Yes, gravy can evaporate if it is left uncovered for an extended period of time while being heated. As the liquid in the gravy heats up, some of it can evaporate into the air, causing the gravy to thicken. It's best to keep gravy covered to prevent excessive evaporation.
It can be any part of it or several of the ingredients that go into gravy.
Gravy would translate to "la sauce".
Spoiled can describe many things, such as a person or food. For a person: She was given everything she wanted, so it was no wonder she was spoiled. For a food: Since the tomatoes had been left out a month, they inevitably spoiled.
Accidental or not, there's no way to tell if it would be safe to eat.
