With a leafy green vegetable, once the leaf starts turning yellow it is past its prime. If you want to eat it, it's still OK, but the quality will be very poor. The crispness, tenderness and flavor will be gone. It's best to send these leaves to the compost pile as they have already done their best and now will help nourish the next batch of greens.
