Basil and oregano (preferably Greek oregano) are absolutely essential. Sometimes a bit of thyme is added as well. In my opinion, it's the basil that gives Pizza sauce it's unique taste (as opposed to spaghetti sauce which would have more oregano.)

It is a plant, but I have not seen anything of it being used as an herb.
