Popes Eye is mainly used to describe a prime cut of beef, especially in Scotland. It is also used to describe a small central circle of fat in a pork loin.

In the Times 2 Crossword Puzzle on 14 October 2008 it is said to be an edible sheep's gland, but I could find no reference to substantiate this via Google. That search did however reveal that the name is used for more than one restaurant - one being a steak speciality establishment near Kensington Olympia in West London.
