If you are using a prepared mix, follow the directions on the back of the package.

Two scratch recipes are :

MOTHER'S FROM SCRATCH BLACK CHOCOLATE CAKE1/4 c. shortening

1 c. sugar

1 egg

3 tbsp. cocoa

1/4 c. sour milk

3/4 tsp. soda

1/2 c. boiling water

1 c. flour

Beat shortening, sugar and egg together. Add cocoa and mix well. Mix sour milk, soda and boiling water together. Add alternately, sour milk mixture and then flour. Beat until no lumps. Will be thin batter. Bake in greased 8 x 8 inch glass or tin baking pan at 375 degrees for approximately 40 to 45 minutes or until it tests done in center. Mother used toothpick or straw test. Delicious iced with Almond Butter Cream Frosting.

SCRATCH POUND CAKE

Cream 3 cups sugar with 6 egg yolks, one at a time

Sift 3 cups flour 3 times.

Mix with: 1 tsp. salt (alternately, add 2 tsp. lemon extract)

Fold in 6 beaten egg whites.

Bake at 350 degrees until done.

CHOCOLATE CAKE

1. In a medium saucepan, combine sugar, flour and cocoa. In a small bowl, beat eggs; add to dry ingredients in a bowl. Mix until smooth.

2. Cook over medium heat(210 degrees)

3. If lumps form, use an electric mixer and beat until smooth after removing from heat.

4. Add vanilla and butter; beat in. Pour into pie crust; set out to cool.
