Bread normally browns on its own. If you brush with some sort of wash that will encourage it to brown and even give it a shine. Two types of washes are an egg wash and a milk wash. You simply scramble one egg very well and then using a pastry brush brush the top before baking. In addition this will allow the bread to expand as it will stay moist. I encourage the use of a slash or two to give a place for expansion.

Why is the top of the zucchini bread flat?

The top of zucchini bread is typically flat due to the moisture content from the zucchini, which can prevent it from rising significantly. Additionally, the batter's density and the absence of strong leavening agents contribute to a more level surface as it bakes. When the bread cooks, it tends to spread out rather than rise dramatically, resulting in a flat top. Proper mixing and baking techniques can also influence the final shape of the bread.

You want the top of the pan in the center of the oven. Bread baked at 325 degrees (F) will have a soft, light brown crust and will require an additional 5 to 10 minutes of baking time. Hope this helps you.

How can I improve my baking skills with the use of a couche for proofing bread?

Using a couche for proofing bread can help improve your baking skills by providing support and structure to the dough as it rises. This helps the bread maintain its shape and develop a better crust. To use a couche effectively, lightly flour it before placing the dough on top, then fold the couche over the dough to create a barrier that helps the bread rise evenly. This technique can result in a more professional-looking and delicious loaf of bread.
