Baguettes are purely flour, yeast, water and salt (by law), wheras American bread has preservatives, emulsifiers etc... Baguettes are designed to be eaten within hours of being baked (they stale quickly; the French buy one daily), American bread lasts at least a week. Obviously, the shape is quite different.
