Firstly evolution is an established fact. Accepted by scientists and many religions.
Several theories have been put forward, by several people, to explain how and why evolution occurs.
The most famous or best known is the one proposed by Charles Darwin.
Very briefly his theory is that evolution occurs through a process called natural selection. That is, those creatures best adapted to their environment are best suited to survive. Those that survive are more likely to have offspring with the survival adaptation.
In addition Darwin nowhere states that mankind is descended from apes, rather that mankind and apes are descended from a common ancestor.

I don't exactly know why evolutionists refer to it as a theory, but I do know this. A theory is an explanation or model based on observation, experimentation, and reasoning. According to the definition of a theory, evolution is not a theory. Evolution cannot be based on observation. No one was here to observe it. So evolution should be classified as a hypothesis not a theory. It is only a guess as to how things came about.
