Warm air rises, cool air sinks. So that's what I guessing as to why you need heat.

That has absolutely nothing to do with the bread getting hot in the oven. Even a brick gets hot inside an oven yet there are no chemical processes occurring.

To make bread and not cake (!), use all the ingredients for making cakes- BUT, use warm water and yeast. The yeast will produce little air bubbles in the dough and cause a chemical reaction within it to turn it to bread. Do not try the yeast with the usual cake mixture, as it will not only ruin your cake, but it will taste disgusting!Hope this helps :)
