Pork is cooked to kill off bacterial and parasitic loads, most notably trichinosis. Trichinosis is the condition wherein you start to harbor a nematode worm called Trichinella spiralis. This worm eventually encysts in striated muscles, and, in extreme cases, can prove fatal. It's very hard to cure. And that's the bad news. The good news is that, in industrialized countries like the US, the UK, France, Germany, etc. rigoriously enforced laws regarding cleanliness in abattoirs has reduced the incidence of this disease to nearly nil. Pigs are no longer legally fed from ofal or from other deceased pigs, as once was the case. So, while I do not advocate eating raw pork, you're probably safe this once. :}

What is pork broccoli?

Basically, pork broccoli is a dish of pork and broccoli. There are several methods and recipes. For instance, my favourite method is to fry the diced pork in a little olive oil on a medium heat. Once the pork is cooked (I like it well cooked and crispy), add the cut up broccoli, and treat like a stir fry. Serve once the broccoli is cooked, but still crisp. Once on the plate(s), add a sprinkle of ground black pepper, and a knob of butter. You can add any seasoning or additional ingredients you wish - but do ensure the pork is well cooked.
