Because that's how Disney decided to price them. I can't claim to know the thought process behind that decision, but I would guess there were a number of factors, including that a person who goes to the park for five days will spend about five times what they would on food for a single day, and is also somewhat more likely to stay in a Disney hotel than someone who was going for just a single day, so Disney's overall revenues are likely going to be higher for a five day ticket than 2.5x what they are for a single day ticket.
