What are Tolkien's tree creatures?

Anything from Orcs to Hobbits. Any creature or creation in Middle Earth, is Tolkien's.

Are Ents trees?

Yes and no. Ents began as trees... The first one existed when some of the first Elves to be in Middle Earth desired to bring life to everything sang some song and brought some trees to life. The Ents never forgot this. However, they are no longer "trees," per say. They are the shepherds of trees, and in the movie, Treebeard takes offense to being called a tree by Pippin.Note also that they are less treelike in the books than in the movie. They are described as being "man-like or troll-like" in shape. Parts of their bodies are covered in something like bark, but their arms are smooth. The Ents did not start out as trees. They were created by the Vala Yavanna with Eru's permission, to be guardians of the trees and flora of Middle-earth. The Elves taught them how to speak.

Is Treebeard the name of a tree or was it the name for the whole group in Lord of the Rings?

No, the whole group are called ents. Treebeard is the name of the individual ent.

Who do the ents in the Lord of the Rings represent?

Nobody. Nothing represents anything in LotR. As Tolkin himself said, "As for any inner meaning or 'message', it has in the intention of the author none. It is neither allegorical nor topical."

Why wasn't Pippin affected the first time he picked up the palantir dropped by Saruman in The Return of the King?

In the movie, I think the first time it was picked up was when they found it in the water after the Ents flooded his Tower. As soon as he picked it up, Gandalf took it and wrapped it up quickly. So, later, Pippin took the palantir and stared into it.
