yes, it is safe to eat out of an open can that has been in the refrigerator. Because I do it myself some of the time but, not all the time. Make sure that if you are going to do this so. Then the canned food item must have not been sitting in the refrigerator for too long periods of time to the point that the canned food item is unsafe to eat. For, example over two months or years, if this is so, then it must be thrown away.
