The short answer is they didn't.

Certain imported fruits such as figs and dates were dried in the hot climates where they were grown, giving them extra viability. But in Europe apples, Pears, plums, strawberries and other fruits could only be eaten "in season" - although apples can be stored in a cool, dark place for a few months.

Since sugar was a very expensive import, preserving fruit in the form of a conserve was not an option available to most people.

Similarly, vegetables could not be preserved for long periods. Only meat and fish could be salted or smoked to preserve it for longer - but salted fish is fairly disgusting to eat, even when soaked for days to remove the salt.
