The Israel was already in turmoil before the Declaration of Independence on May 14, 1948. Jewish Militias had been fighting with Arab Militias as early as September of 1947. Many of the Arab States, however, threatened Israel that to declare independence (and therefore seek international legitimacy) would result in them declaring war on Israel, intensifying the already brutal guerrilla campaigns. Deciding that they would rather be recognized and be able to treat with other nations than to exist in eternal fear, Israel chose to declare independence. The Arabs made good on their threat.

The Arab Nations surrounding Israel declared war on it the day after it declared independence, but the Jewish and Arab Militias in the territory had already been fighting since November of 1947, so nothing really changed for them; the war just got much bigger and became official.

Conflict with Arab nations and Palestinians
After Israel declared its independence in May 1948, it was attacked by Egypt, Jordan, Syria, Lebanon, and Iraq, plus contingents from Saudi Arabia, Yemen, Sudan, Morocco, and the local Palestinians.

1948 Zionist never attacked Palestine; there were always Zionistic Jews in Israel. Palestine is just a name the British made up for the area; Zionist obviously couldn't have attacked it in 1948. Israel declared independence and most of the Arab countries attacked it.
