Only 1 pilot is needed to fly small aircraft like a Cessna, on your average commercial flight there will be 2 the pilot and his co-pilot, On long international flights there can be up to 4 because there are Federal restrictions on the amount of time a pilot can be "at the stick", also on longer flights there is generally a Navigator to go along with the pilot and co-pilot.
