They speak mostly German however there are many different types of German but for the most part they break down into two main dialects which are High German and Low German.
All the different types of German will fit into these two parent dialects. For example Standard German and Yiddish are both sub-divisions of High German. High German dialects are spoken in Central and Southern Germany.
Low German also known as Low Saxon spoken in the Northern areas of Germanic Europe and is pretty much the parent language for Dutch and the Netherlands dialects.
