Depends on the Monks.
Christian Monks tend to sing in Latin (sometimes Greek)
Buddist Monks tend to sing in Pali (a language from Nepal/India)
Hindu Monks don't chant as far as I can find out but if they did it would probably be in Urdu.
Islam doesn't really have monks but they have dervishes who whirl and dance instead of chanting.
There aren't really Jewish Monks.
