Ashunta, to my knowledge, is made-up and thus has no legitimate meaning.

Sound- and similarity-wise, though, it could have stemmed off from Ashanti; the name of an African people who reside in southern Ghana. It possibly means "warlike" in the Twi language.

It also reminds me of the Italian Assunta, which is a cognate of Spanish Asunción, which means "assumption." This name is often given in reference to the assumption of the Virgin Mary into heaven.
