VE Day was the day of Victory in Europe, from which the initials VE come. It was the end of World War 2 in Europe. The war with Japan continued for some months longer.
The end of a war means that the soldiers stopped being shot, blown up and dying. The nation could quit spending billions of dollars making jeeps, airplanes, artillery, rations packs, bandages, shoes, etc etc.
But on the other hand, many people were put out of work at the jeep factories, airplane factories, shoe factories, and bandage factories. Despite what some claim, the end of World War 2 was not great for the economy, yet the economy did OK, probably because people like you and me could stop donating money to the war effort, and start spending it in stores -- that is GOOD for the economy!
