The modern world would be different if Muslim armies had won the battle of tours. Most of the things that are done would be controlled and directed by Muslim beliefs and there would certainly be slim chances of religious freedom.

The whole history of Europe would have been fundamentally altered and Catholicism would have become a minority religion in Europe. America would likely have been discovered later as Muslims had no need to go west for access to spices.
