The US opened up trade with Japan directly, being the first Western country to violate Japan's isolationist policy. As a result, they established embassies and consulates in Japan and traded directly with the Shogunate and (later) Empire of Japan. Conversely, by the time the US arrived in China, Western countries had already carved up much of China into Spheres of Influence. As a result, the US pursued the "Open Door Policy" which was a policy that would allow the US (and any other Western power) to operate in any of the extant Spheres of Influence.
John Hayes Open Door Policy was trying to prevent China from being carved up into spheres of influence by the Russians, British, Japanese, etc... Basically was trying to get America a foothold in Chinese trade, because America was behind on getting spheres of influence, and didn't want to miss out.

The Open Door Policy proposed in 1898 by President McKinley was meant to open up access to the Chinese markets to all trading powers. It meant that China would not be carved up into spheres of influence and the imperial nations could trade anywhere in China. It also meant that nations who already had a footing in China with the intent of controlling exclusive markets would have competition. It was a move on the part of Secretary of State John Hay to protect American investments in China, so that they could still compete and do business in all of China, having no sphere of influence of its own.
