In Star Trek: Enterprise it's NX-01 In the Original Star Trek (and the new movie) it's NCC 1701 For movies 4-6 it was NCC 1701-A For Star Trek: The Next Generation it was NCC 1701-D For movies 8-10 it was NCC 1701-E. Two intermediate starships with the registry numbers NCC 1701-B and NCC 1701-C have had cameo appearances.

If speaking chronologically, the Star Trek novel Imzadi shows an alternate time-line Enterprise NCC-1701-F commanded by Commodore Data in the 25th century. There is also an Enterprise NCC-1701-J in Star Trek Enterprise when Daniels takes archer to an alternate future, but we never find out who commands the vessel.
Actually, NCC doesn't stand for anything. It actually came from American aircraft registration numbers: An N in the tail number means that the aircraft is from the USA. In addition, a C means it's a Civil aircraft. One of the people that worked on Star Trek: The Original Series (Bob Justman, I think), added another C, just because he thought it looked good.--- The Star Trek Encyclopedia, 1999 version.
In "Star Trek: The Next Generation," Will Riker does not appear in "Star Trek II: The Wrath of Khan," as that film predates his character. However, if you're referring to the USS Enterprise codes or designations, the starship featured in "The Wrath of Khan" is the USS Enterprise (NCC-1701) and the subsequent USS Enterprise (NCC-1701-A) appears later in the series. If you meant something else, please clarify!
