Appellation D'origine Controlee
Sancerre (just a village but known well over France) or Chateauneuf-du-Pape, or Beaune in Burgundy (Bourgogne in French), an historical wine town. There are many museums and world famous "Appellations d'origine contrôlée (AOC)" to visit. As a matter of fact most wines are named after the place they are grown in. (and similarly the system of AOC Apellation d'Origine Contrôlée means that you can't make wine with grapejuice coming from far away)
The French Appellation d'Origine Controlee (AOC) in English means Controlled designation of origin. The AOC mark guarantees that the cheese originates from a specific region in France, from milk from specific herds of animals in the same area and partly matured there, that the cheese was made using strictly defined traditional methods, that the characteristics such as size, type of rind, texture and minimum fat content of the cheese have been precisely defined and adhered to, and that the producers submit themselves to review by a public control commission, which guarantees the authenticity and quality of the products.
AOC = Appelation d'Origine Controlée. For a wine to bear a regional name, it must be made within the closely defined region in question. For instance, the phrase 'Australian Burgundy' is illegal in France, because Burgundy is not in Australia. Champagne MUST be made in Champagne, from grapes grown in Champagne, by the Méthode Champenoise. Every wine area has its boundaries and rules, covering the geographical area, the manufacturing methods and the variety of grape used. Less well known is the fact that this rule does not only apply to wine. Many locl cheeses have their appelation, too; generally, anything with a regional name must come from its region. Where I used to live in Normandy, France, our village of Créances was fiercely proud of its AOC carrots.
In 2007, France's oldest winery was discovered near Clermont l'Herault (Terrasses du Larzac AOC). It was dated 10AD, and falls into the Clairette du Languedoc Appellation. The Languedoc is France's oldest viticultural region.

AOC stands for "appelation d'origine controlee" and is the French designation for name-control status on a cheese. Makers entitled to use the AOC designation on their cheese must be in compliance with leagl stipulations regarding how and where the cheese is made. So if your French cheese is AOC, that means it's the real deal.
In US law, AOC stands for "age of consent". The AOC law for a state designates the legal age at which a minor can engage in consensual sex. The age of consent and the age of majority are NOT always the same.
