Star Trek represents The Federation of Planets, where there are over 150 planets and many different species of both humanoid and non-humanoid. There are also unexplored areas of the Alpha Quadrant that have other factions and empires. The greetings are obviously much more sparse in difference than the different languages on Earth alone.
But not to poke you in the eye for not being specific, so I may be able to recall a few:
- The Bajorans like to mention their "Prophets" in greetings, like "May the Prophets walk with you".
- Vulcans greet and depart with "Peace and long life" and "Live long and prosper" while showing the "V" hand symbol (much like Mork from Ork and the greeting "Na-noo, na-noo" only sideways and in a wierd handshake, which is totally irrelevant).
- The Ferengi greet in any way that would represent good profit.
- The Borg greet with "You will be assimilated, resistance is futile."
- Klingons greet and depart with "K'aplah", which is Klingon for "success".
- Rizans greet with seduction... provided you have purchased a "Horgon" icon and display it wherever you go.
- Friendly Talaxians greet like annoying door-to-door or car salesmen.
- Betazoids greet you based on what you are thinking.
- The Q greet you any way they please because they deem themselves greater than gods.
To name only a few in the small explored corner of the Federation quarter of the galaxy and some in other areas. I hope this answers your question somewhat.
