Well, to be brutally honest, there aren't any famous composers, i.e. any composers that wrote anything well-known, from Australia. None of the composers that have their own category on WikiAnswers are Australian, and there are so many Australian composers I couldn't possibly give you a list of all of them.
Classical music was first played in Vienna. The tradition became so popular that is eventually spread worldwide. Most composers were either taught or born in Vienna (for example, Beethoven went to Vienna and was taught by Heiden). Vienna was, after all, the center of classical music.
Over the years many English composers (or composers residing in England) have collected folk songs by either memorising and then writing it down, or by recording them. During the early 20th Century, Folk Song collecting was becoming quite a past time of composers such as Holst, Britten and Vaughan-Williams. However, it was Australian born composer Percy Grainger who famously cycled up and down England recording Folk Music over 200 times on his Thomas Edison Phonograph.
Johann Sebastian Bach, Ludwig van Beethoven, and Johannes Brahms were three German composers.
Both of them were music composers and pianists. Both of these composers were born in 1810. Schumann and Chopin both belong to Romantic era.

Well, there aren't that many specific composers that created their own style. Music just changed throughout time like a language. First would be the baroque era, the classical, the romantic era and the type of music we have today. I think what you're looking for is who started to compose the new types of music, but there were also smaller types of music in between the four major ones. For example, the famous Bach was born during the baroque period, but his son played in between baroque and classical, which was called the Roccoco period. If you want to skip that annoying paragraph I wrote above, just read this part. Research what year famous composers were born and check what year they started composing. That should tell you what style they played and if they're really famous, then there's an obvious reason why they stood out. They played different new music. :P
A music composer is a person who writes songs and music. For example, Johann S. Bach wrote Minuet in G in 1741. Usually composers were from long ago. Johann S. Bach was the first composer ever and was born in 1685.
