So every note (or most) are separately recorded and burned into a chip. When you press a key, a timer kicks in to detect the speed of you pressing and the dynamic is calculated and the right sample and right volume are chosen. This also occurs if you have a pedal down.
String instruments and orchestras can be done the same way but are limited in what you can do becausethey have so many parameters. They are mostly assembled into music using a computer, acybaseor a big sample base. Or they are played out on a midi keyboard.
Electric violins Guitars and cellos are amplified strings. Some can play acoustic but amplification alters the proper sound. You can get the proper sound from acoustics with studio microphones but that doesn't count.
