1) open iTunes
2) click on Podcasts from the Library list on the left side of the window
To remove a genre from a single podcast:
3) select the podcast(s) that have the genre that you want to remove
4) from the menu bar, choose File: Get Info
(or right click on the podcast(s), then choose Get Info)
5) change or remove the genre at the bottom of the window

To simply hide the Genre column and not actually change the podcasts:
3) from the menu bar, choose View: View Options
4) uncheck the Genre checkbox
