It's all personal preference. A German bow is held differently, and is less common, held with your palm perpendicular to the strings. A French bow, in some circles, is considered more professional, and is held by pinching with your thumb and forefinger and spreading your other fingers. You will get sound quality depending on the quality of the bow, strings, and pressure you exert on the strings. A quality German bow should not sound different than a quality French bow however.
