By using two systems. Firstly the body of a scorpion is covered in sparse, course hairs that are very receptive. These hairs can pick up fine vibrations in the air (such as a moth of beetle landing somewhere) Secondly on the underside of the body, a scorpion has two feather-like structures called pectines. These structuires can pick up vibrations on the ground (eg a beetle running) as well as chemical trails left by insects. The pectines work like a little GPS and tell the scorpion exactly where it is in relation to it's prey.
