It's called dieseling, and i had the problem in my 87 Caprice for a while. A quick solution is to shut your truck off while it's still in gear and put it in park when the engine completely shuts off.
It is the only one hanging off the side of the engine/relay fuse block
If you ran it out of oil, you may have locked up the engine. It needs oil for lubrication. No oil...no engine.

use a voltmeter A fully charged 12v battery should read approx. 12.8 volts without engine running Should read approx. 13.8-14.2 volts with engine running
It cycles the fan on and off to cool the engine to a certain temperature and to keep it from running hot
60 to 66 PSI. Can be as low as 50 when engine is running.
Drive side of the engine....about halfway back. It will be right above the cross member running under the engine.
if it's runninng rough my guess could be spark plugs are fouled up. if not then next check the spark plug wires then the distributor.
No less then 13.8 and no more then 14.2 Volts with engine running.
If you are checking Alternator voltage, It should 12.8 volts to 14.3 with engine running. Battery voltage is 12.3---12.8 with engine off.
