The Scoville Scale is a measure of the heat level or pungency of chilli peppers; the greater number of Scoville units, the hotter the pepper. The scoville scale measures the level of capsaicin, the active principle that causes the heat. The scale ranges from the bell pepper with zero scoville units, through jalapeno's with between 2,500m - 10,000 units, to the hottest chillies habaneros and scotch bonnets between 80,000 - 300,000. One of the hottest chillies was a Red Savina habanero with 577, 000 scoville units.
In Februari 2007 the Naga-Bih Jolokia pepper cultivated at New Mexico State University have stood-up to testing, a specimen registering a staggering 1,001,304 Scoville heat units was officially acclaimed by the Guinness World Record as the new worlds hottest pepper. Naga Jolokia is nearly twice as hot as the previous holder, the Red Savina habanerp.
Pure capsaicin is 16,000,000 units.
Chilly heat is an oxymoron!Chili heat is measured on the Scoville scale and recorded in Scoville Heat Units. Although the scale is based on the amount of capsaicin in the chili, it is an arbitrary scale. This is because it is an empirical measure which depends on tasters' judgement. Not only that, but after tasting a few chilis in a short spell of time the heat receptors in the tasters' palates get desensitised, and so the rating depends on how early in the process a particular chili is tasted.
A single peri peri chilli measures approximately 100,000 Scoville units. Nando's peri peri sauce contains 5 chillis = 500,000 Scoville units. Their extra hot sauce has 8-10 peri peri chillis which is equal to 800,000 to 100,000 Scoville units.
Habanero peppers are typically 10-20 times hotter than cayenne peppers on the Scoville scale, which measures the heat level of peppers. Habaneros typically range from 100,000 to 350,000 Scoville Heat Units (SHU), while cayenne peppers range from 30,000 to 50,000 SHU.
Habanero peppers typically rate between 100,000 to 350,000 Scoville Heat Units (SHU), making them quite spicy compared to other common peppers. This places them in the same range as some of the spicier varieties of chili peppers.
Enthalpy is the measurement of heat, Joule (J) is the unit. Temperature is not a measurement of heat. Temperature has the unit Kelvin (K) or Celsius (oC)

The difference in Scoville heat units between serrano and jalapeno peppers is that serrano peppers are typically hotter, ranging from 10,000 to 23,000 Scoville heat units, while jalapeno peppers range from 2,500 to 8,000 Scoville heat units.
The Scoville rating of Calabrian pepper is around 25,000 to 40,000 Scoville Heat Units, indicating a moderate level of spiciness.
The Scoville rating of Calabrian peppers ranges from 25,000 to 40,000 Scoville Heat Units, indicating a moderate level of spiciness.
The Scoville rating of Chipotle Red Chili Salsa is around 1,500 to 2,500 Scoville Heat Units.
The Scoville scale is used to measure the heat level of chilies and other spicy foods. Developed by Wilbur Scoville in 1912, it quantifies the amount of capsaicin, the compound responsible for the heat sensation, in a given pepper.

The difference in Scoville heat units between a serrano pepper and a jalapeno pepper is about 5,000 to 23,000 SHU.
Banana Peppers rate at 500 Scoville Heat Units Pablano's 2000 Anaheim's 2500 Jalepeno's 5000 and Habanero's at 325,000 Scoville heat units.
The highest rating on the chili Scoville scale is 2,200,000 Scoville Heat Units, achieved by the Carolina Reaper chili pepper.
