On the day (about 5 billion years from now) that the Sun changes from its current energy levels and expands sufficiently to burn away the Earth's atmosphere, evaporate the planet's water and bring an end to all life here.

Scientists are divided as to what will actually happen to the planet when this happens - it may be consumed by the expanding Sun, or it may just become another rocky piece of unchanging space matter.... but our interest in the planet will definitely have ended.

That is when the Earth will die. When humanity dies is another question.
