As you have probably been told, the easiest way to write an essay is to have a good idea what your conclusion is going to be before you start. Then you can direct the flow of the essay toward that conclusion.
A very basic outline of Romeo and Juliet is: Romeo meets a beautiful girl named Juliet who he falls in love with. She is a member of a family that Romeo's family is at conflict with. There love is forbidden, but they go against it and pledge themselves to each other. Juliet, in order to be with Romeo, pretends to kill himself, but he does not know. Romeo finds Juliet in her predend death, believes it is real and kills himself right beside her! Juliet wakes up, realises what has happened and she also truly kills herself. there is a bit more to it than that but that should do :-)

It really depends, doesn't it, on what you are saying about Mercutio in your essay. Whatever aspect of Mercutio's character seems most important to you, find a quotation which exemplifies that aspect.
