It's sounds like the two dead pieces were the first flower bud/stem and possibly the tip of the second also. You don't say if you bought as part of a kit, or a bare bulb, or a plant...but now you have leaves. If they are healthy, I would keep and look after the plant -- with care, it can bloom beautifully for next holiday season, but isn't likely to bloom again just now (though there are amaryllis that bloom more than once a year, it's fairly unusual).
