That depended on their interests. A few hobbies that I can think of some English kings and queens had:

William II liked hunting and making sure everyone knew how much he despised the church.

Matilda of Scotland liked to read and was very active in charity (she even washed the feet of leppers often). She was also very active in building and architecture.

Henry I liked spending time with pretty women and siring bastards.

Henry II had difficulty sitting still and would do things as mend his own clothes or hunt like crazy.

Edward I liked to play chess.

Edward II is one of the most interesting in this regard. He liked to row boats, build walls, swim and all kinds of other things that were not considered kingly.

Henry VIII composed music and liked to debate with scholars and humanists in his early days.

Anne Boleyn liked playing cards and discussing religion. She was also a witty conversationalist, who liked to dance.

Jane Seymour liked gardening.

Catherine Howard liked dancing, clothes and had an affair.

Catherine Parr liked discussing religion and published two books.

Edward IV and Elizabeth I both liked studying very much. Both Mary I and Elizabeth I played music together and Elizabeth also liked riding horses and dancing to keep fit.

James I liked to hang out with handsome young men.

Charles II was called the merry monarch for good reason: he liked theater, parties and having many mistresses.

Mary II liked walking briskly.

Caroline of Anspach liked reading and corresponding with scholars.

George III would pray constantly and was very religious.

William IV thought becoming king at such a late age was great fun and would drive his carriage through London, regularly giving people a lift.

Victoria liked drawing and painting.

George VI liked to spend time with his children.

The current queen loves to spend time with her dogs and ride horses.
