I took it out about a week ago in April, it was just as good as when I first baked it, in fact Amish bread tastes better to me when it has aged. I even freeze the starter. The starter does not freeze completely it just stops the rising action. I had that starter in the freezer for over a year took it out of the freezer and set it on the counter over night and I consider the next day my "first day" of the bread baking process.
